USE AND MAINTENANCE INFORMATION

PREPARING THE MACHINE FOR USE

Fix the machine to the table using the special vise and insert the lever into the hole of the rollers. When the machine is to be used for the first time, it is necessary to clean it with a dry cloth to remove excess oil. To clean the rollers, pass a small amount of dough between them, which should be discarded later.

PREPARATION OF THE MIXTURE

Size for 6 people.

Ingredients: 500 g of soft wheat flour and 5 eggs; You can use 1 glass of water instead of 5 eggs. Mix 250 g of soft wheat flour with 250 g of hard wheat flour for a delicious pasta. Do not add salt! Take the flour in a bowl and turn the eggs in the middle. Mix the eggs with a fork so that they are completely mixed with the flour. Knead the dough with your hands until it is completely homogeneous and reaches its consistency. If the dough is too hard add water, if too soft add flour. A full dough should never stick to your fingers. Take the dough out of the bowl and place it on a lightly floured table. If necessary, continue to knead the dough with your hands and cut into small pieces. A tip: do not use eggs that have just been taken out of the refrigerator!

PREPARATION OF DOUGH AND PASTA PRODUCED WITH “ATLAS”

Bring the regulator of the machine to the number 1 by pulling outwards and with the two straight cylinders fully open (approximately 3 mm). By turning the handle, pass a piece of dough between the rollers.

Repeat this operation 5-6 times, doubling the dough and adding flour to the middle if necessary. When the dough gets a regular mold, the regulator is set to number 2 and pass it between the rollers only once. Then pass it once again at 3 until it reaches the desired thickness. (min. thickness – 0.2 mm n..9) Cut the dough crosswise into approximately 25 cm lengths (=10”) with a knife and place the handle in the hole of the cutting cylinders and while turning it, pass the dough to get the preferred type of pasta.

If you wish, thin pasta (1.5 mm TAGLIERINI) through the front thread or thick pasta (6.5 mm FETTUCCINE) through the middle thread. you can get.

Note1 – 

If the rollers  If they cannot 'cut' or separate the dough well, it means the dough is too soft. In this case, we recommend that you pass the dough between flat rollers after adding flour to the mixture.

Note2

 – The dough is too hard  Make sure there is no dough, otherwise the rollers will not be able to take the dough.

Boil plenty of salted water into which you will pour the pasta. Mix it carefully and pass it through a sieve after cooking.

MAINTENANCE OF THE MACHINE

1- During use, clean the scrapers under the flat rollers with a piece of kitchen paper from time to time.

2-Never wash the machine with water or in the dishwasher!

3-To clean the machine after use, use a brush and a wooden stick.

4- If necessary, drip a few drops of petroleum jelly on the ends of the cutting rollers.

5-Do not pass knives or kitchen cloths between the rollers.

6- After use, keep the machine and its accessories in their own boxes.
