When the machine is to be used for the first time, it is necessary to clean it with a dry cloth to remove excess oil. To clean the rollers, pass a small amount of dough between them, which should be discarded later.PREPARATION OF THE MIXTURESize for 6 people.Ingredients: 500 g of soft wheat flour and 5 eggs; You can use 1 glass of water instead of 5 eggs. Mix 250 g of soft wheat flour with 250 g of hard wheat flour for a delicious pasta. Do not add salt! Take the flour in a bowl and turn the eggs in the middle. Mix the eggs with a fork so that they are completely mixed with the flour. Knead the dough with your hands until it is completely homogeneous and reaches its consistency. If the dough is too hard add water, if too soft add flour. A full dough should never stick to your fingers. Take the dough out of the bowl and place it on a lightly floured table. If necessary, continue to knead the dough with your hands and cut into small pieces. A tip: do not use eggs that have just been taken out of the refrigerator!PREPARATION OF DOUGH AND PASTA PRODUCED WITH “ATLAS”Bring the regulator of the machine to the number 1 by pulling outwards and with the two straight cylinders fully open (approximately 3 mm). By turning the handle, pass a piece of dough between the rollers.Repeat this operation 5-6 times, doubling the dough and adding flour to the middle if necessary.
