The leaves taste similar to kale greens, while the bulbs provide a mild flavor that resembles a combination of turnip and cabbage.
Bulbs grow above the soil and have a light green exterior with a white flesh. The texture is crunchy and is excellent prepared raw as a slaw or an addition to salads.
Kohlrabi bulbs should be harvested at about 3″ in diameter, or about the size of a tennis ball. Excess moisture should be monitored, as this can cause bulbs to split. Bulbs should be peeled before eating as the outside is tough and not palatable.
White Vienna Kohlrabi may be direct-seeded or transplanted, although we recommend transplanting. Thin to 8″-12″ for optimal bulb production.
Transplanting allows for more consistent plant spacing and prevents seedlings from competing with weeds in the early stages of the plant.
We recommend starting transplants 3-4 weeks before the desired outdoor planting date.
Kolhrabi transplants grow great in our heavy-duty seed starting trays, where they develop a solid root ball with roots that are trained to grow downward.
Plants are ready to go in the ground when they can be easily pulled from the cells in the seed starting tray.
